Eryngo Salad - Kueikh

Ingredients

  • 1 Bunch Eryngo
  • 6-7 leaves of chives
  • 1 Bunch mint
  • 1 Bunch parsley
  • 2 green tomatoes
  • 1/3 cup of olive oil
  • 2 lemons
  • 1 teaspoon of salt 


Method of Preperation

  1. Wash, boil, squeeze, drain and chop roughly the Eryngo 
  2. Chop the chives 
  3. Add chopped mint, parsley and tomatoes
  4. Mix well with olive oil
  5. Add the lemon juice
  6. Add 1 teaspoon of salt
