Eryngo Salad - Kueikh

Ingredients
- 1 Bunch Eryngo
- 6-7 leaves of chives
- 1 Bunch mint
- 1 Bunch parsley
- 2 green tomatoes
- 1/3 cup of olive oil
- 2 lemons
- 1 teaspoon of salt
Method of Preperation
- Wash, boil, squeeze, drain and chop roughly the Eryngo
- Chop the chives
- Add chopped mint, parsley and tomatoes
- Mix well with olive oil
- Add the lemon juice
- Add 1 teaspoon of salt
